What-the-heck Chocolate Cake

In case any other moms are making birthday cakes that need to be wheat-free, dairy-free and sugar free. We LOVE this cake, and none of our guests can tell it's missing those things. And no eggs! Weird.

Called "What the heck" because it's what Steve usually says when he eats a piece and knows the ingredients. His amazement hasn't waned and we've made this quite a bit. It's so yummy!


• 1 1/2 cups flour (I use half barley flour and half oat flour)
• 1 tsp baking soda
• 1/2 tsp salt
• 3 tbsp cocoa powder (we used carob powder, and it tasted great!)
• 1 cup pure maple syrup, agave nectar or honey (I mix up different ratios of these)
• 1/3 cup cooking oil (safflower is a good one for this)
• 1 Tbsp vinegar
• 1 tsp vanilla
• 1 cup cold water
• Eggs weren't used in the original recipe, but you can add 2 if you'd like.

Mix the dry and wet ingredients in two different bowls, and then combine. Do not overbeat.
Works well for mini loafs, muffins, and 9x9 inch pans.
Bake at 350 degrees for 30 minutes.
