Egg casserole "recipe"

Okay, here's another one I pass out a lot.

This can't really be called a recipe, since you just cook from your heart and stir till it looks decent. ;) Heehee.

- Line a greased 9x12 pan with tator tots.
- Mix up 18 eggs with whatever add-ins you want: We like diced red peppers, spinach, italian sausage, and black beans...but you could add anything.
- Pour over the tator tots.

Cook at 400 degrees for 40 minutes.

I like this for giving to new mamas, because there's no wheat, dairy or tomatoes to make a nursed babe fussy. And it keeps really well in the fridge and freezer.
